No, they haven't signed off for three more seasons - not yet, anyway. I think they're considering it, though.
I like the idea that Katara and Aang will just be holding hands, no words necessary.
WAIT! I've just had sudden inspiration! What about this:
"It's time," Sokka said solemnly, gazing up at the sky from Appa's back. The moon, a shadowy orb in the daylight, was slowly beginning to cover the sun: the eclipse had begun.
Taking a deep breath, Aang stood up, staff in hand. He had barely taken a step towards the side of Appa's saddle when he stopped. He looked over his shoulder at Katara. She met his gaze, and could feel the warmth from his eyes washing over her, and suddenly, something snapped into place. She stood up as well.
Aang had turned back around, about to open his glider. "Aang," Katara said softly. He faced her again, this time turning his whole body to find that she was much closer than he expected. She took a step even closer. Aang saw the love in her eyes, and could feel the love in his heart, and knew that right then, he could close that gap between them -
But Katara did it first. Her lips gently brushed against his own, and he felt his heart flutter, his spine tingle... And he kissed her back knowing very well that it might be, not only the first, but the last time he ever did so.
When they finally pulled away, their hands laced together, their faces still only inches apart, Aang wished he could stay there, frozen in time, forever. But he knew his destiny awaited him, and the urgency of this calling didn't escape Katara's notice. She took a small step back.
"Be careful," she whispered, so that only he could hear.
"I'll be back," he said just as softly. "I promise." Reluctantly, he broke eye contact with her, turning around and opening his glider. He flew off of Appa, down towards the palace, dreading what was to come next. And yet he smiled, knowing what awaited for him if - no,
when - he returned.
Later...It was over.
Aang breathed long and deep, never appreciating life more. Most of his injuries were completely healed, thanks to Katara; Ozai was vanquished, and Zuko was quickly restoring order to his native country, with his uncle's guidance to assist him.
He climbed onto Appa. Sokka and Toph joined him, sitting in the back of the saddle. Katara sat near the front, smiling ever so sweetly at Aang. He smiled back, then turned forward.
"Yip, yip!" he called, and with a relieved growl, Appa took off. Moments later, Katara joined Aang on Appa's head. Aang met her gaze, admiring her beauty in the light of the setting sun. She grabbed his hand, entwining her fingers with his.
And as they flew off into the sunset, with the horrors of war behind them, and the prospect of a happy future before them, Aang and Katara sat together, enjoying the peace; relishing the joy of love.
